The first thing you need is a smooth icing to cover the surface of the cake; make sure you cool them completely before you begin. Crumbs can damage the icing and makes your cake decorating look unprofessional, so start with a thin layer of frost just to cover and lock them before you start application of the regular layer. Once this has been done, place them on the refrigerator for 20 minutes. This sets the crumbs, locked into the first and makes your job easier. Now you can have fun decorating you cake without having to worry about those dreaded crumbs suddenly appearing.

You can apply the next layer using an icing spatula to make the job much easier. Use the spatula and smooth the icing on the sides of the cake, running it smoothly along the edge. There is one well-kept secret you can use: dip the spatula in cold water before you start any smoothing, it makes the job a whole lot easier. Then dip it again in cold water and start smoothing the surface of the cake. Drag the spatula, skimming the top of the icing, from the furthest point towards you.

Some cake decorators say learning to smooth the icing is the hardest part of cake decorating. Spend time practicing this before you do the real thing. Once you get it right, show it off to your family and friends.

One good alternative to icing tops are sugar coated powders that are dusted across the surface of the cake. You can create an elegant feel merely using powdered sugar or use a stencil to create more elaborate designs. Edible decorations are a beautiful yet simple cake decorating technique. The use of colorful candies, nuts and coconut slices can make your cake stand out from the crowds.

The use of cardboard combs can make your icing looks textured. Piping is achieved by using a pastry bag fitted with a metal tip that is held on by a coupler. Perhaps this is the most crucial pat of your cake decorating. Do not over stuff your piping bag, one cup of icing is sufficient and start decorating your cake by using a steady pressure. You may use your other hand to move the tip safely without smudging. There are plenty of techniques you can use when piping.

One may use fondant in complicated cake decorating endeavors. Fondants are used to cover cakes, kneaded and rolled to create a beautiful classic look. They are often used to create elegant 3-D designs.
